• How we source the coffee

How do you find all these delicious coffees?

We do this by working closely with the right people. The coffee world is quite small and it is important to know the right people. Absolute works closely with importers of green coffee, so called green importers.

Coffee sourcing is an ongoing process and we love it. As coffee changes with the season you need to keep trying new batches and perform cupping sessions. Basically what that means is that we constantly try new samples and look for great coffee. So yes, we drink a lot of coffee!

Some coffees we buy come directly from the coffee farm and others go through the importers. Whatever the method is the important thing is that the farmer gets a great price and this is why we have decided to pay for great coffee. When a coffee farmer grows great coffee we are more than happy to pay a premium for this.

Paying a premium for great coffee encourages the coffee farmer to take pride in their work, pay the workers on the coffee farm more and to use better farming techniques that benefits everybody.

We also sell Rainforest Alliance certified coffee and support the CoffeeKids charity.

Do you perform many cuppings?

We don't really do cuppings on our espresso blends but rather test it as espressos; we test the coffee the way it is intented to be brewed. So when we roast a coffee which is best drunk as a filter coffee we test it as a filter coffee.

Barista training"My partner and I had a wonderful Valentine's Barista training session at Absolute Coffee last Sunday in Halifax. Our trainer, Youri, was very friendly and taught us all about the coffee making process with infectious enthusiasm and good humour. After a very interesting talk-through on the lifecycle of coffee from the bean to the cup we got stuck in and started making our first espressos.

Due to Youri's very clear instruction and explanation on what makes a great espresso, we were pulling great shots in no time at all, with all our handiwork captured on Youri's camera!
Once Youri was happy that we had a good grasp of pulling consistent shots, we moved on to milk based drinks and were both delighted with the results we were getting. The day finished with us giving a good deal of time trying to perfect our Latté Art hearts...very appropriate for the day that was in it! We would thoroughly recommend the Barista training course to anyone who has an interest in learning how to make wonderful coffee.
